It's in Veganomicon, which I have, but I'm sure it's around online, too. I followed the recipe pretty faithfully, except I used cannelini beans rather than navy and dried instead of fresh thyme.

(We made the awesome banana-walnut waffles from said book that morning, so i was already paging through it, and realized I had all the ingredients for the cassoulet on hand.)

(One of our dinner guests was a pro chef, and he had seconds. :)
